Step 1
Drizzle the oil of your choice in a large skillet set over medium-high heat. Add the diced chicken to the pan, and then pour the soy sauce over top. Sauté for about 10-12 minutes, until the chicken is fully cooked.
Step 2
Stir 3/4 cup of the peanut sauce into the chicken, and continue to cook until the sauce is warmed through.
Step 3
Serve with brown rice and colorful sliced veggies. Garnish with chopped unsalted roasted peanuts, as desired.
