Quick & Easy Peanut Butter Chicken

1.5-lbs. boneless skinless chicken breasts,

Drizzle the oil of your choice in a large skillet set over medium-high heat. Add the diced chicken to the pan, and then pour the soy sauce over top. Sauté for about 10-12 minutes, until the chicken is fully cooked.

Stir 3/4 cup of the peanut sauce into the chicken, and continue to cook until the sauce is warmed through.

Keto peanut butter chicken is a Thai-inspired dish of perfectly tender chicken cooked in a creamy peanut butter curry sauce.

Keto Peanut Butter Chicken

cumin

Boneless (Skinless Chicken thighs,

Soy Sauce (divided)

Red bell pepper (diced)

Garlic (finely minced)

ginger

Onion (finely minced)

peanut butter

Red curry paste

Chicken broth

Lime juice

cilantro

Combine the ground cumin and coriander in a small bowl, mixing together well.

Heat a large skillet over medium high heat.

Add the cubed chicken thighs to the skillet and sprinkle 1 teaspoon of spice mix and 1.5 tablespoons of soy sauce over the chicken.

Cook chicken for 5 minutes then add the finely minced garlic and diced red bell pepper continue to stir and cook for 5 more minutes, or until the chicken is cooked through. Remove from pan and set aside.

Return  the skillet to the stove top continuing to heat over medium heat.

Add the natural peanut butter, red curry paste, remaining 1 teaspoon of spice mix, 1.5 tablespoons of soy sauce, and chicken stock to the pan and stir together.

Add the chicken, onion, and bell pepper to the sauce and continue to cook for 5-10 minutes. Until the sauce thickens and coats the chicken well.

Remove from the heat and add the lime juice and chopped cilantro. Stir it into the dish and serve immediately.

Thai Peanut Chicken Pasta

spaghetti noodles

Tablespoons sesame oil (, divided)

chicken breasts

salt and black pepper

Tablespoon garlic (, minced)

Tablespoon ginger

carrots (, julienne sliced)

red bell pepper (, chopped)

napa cabbage (, chopped)

red cabbage (, chopped)

green onions (, chopped)

cilantro (, chopped)

honey

Tablespoons rice vinegar

Sriracha hot sauces ((or more to taste))

Cook spaghetti noodles according to package instructions. Drain and toss with 1 tablespoon of sesame oil. Set aside.

Add&nbsp;1&nbsp;tablespoon of sesame oil to a large wok or fry pan over medium heat.&nbsp;

Season chicken with salt and pepper. Add chicken to pan and cook for several minutes on both sides, until cooked through.&nbsp;

Remove to a cutting board to rest for 5 minutes, then chop.

Stir sauce ingredients together in a small bowl. Set aside.

Add remaining tablespoon of sesame oil to the pan over medium high heat.

Add garlic, ginger, carrots, bell pepper, both types of cabbage, peanuts, chopped chicken, and green onions.&nbsp;

Saute for 2-3 minutes. Lower heat to medium and add the sauce to the pan and toss to combine.&nbsp;

Serve warm. Garnish with fresh chopped cilantro.

Super tasty, fast and easy to make. We just made it, and have already added the ingredients to our shopping list to make it again. Highly recommend.

I cheated and used Dr Foo’s Thai coconut peanut sauce with added ginger, garlic and sriracha and it was delicious.  Had some lo mein noodles and they were just the right texture. Keeping this one for repeat for sure.

This recipe is one of the best we have ever eaten. Mutually agreed upon authentic Thai tasting. The only negative, is for some odd reason this did not reheat well the following night. Exceptional recipe though!
