This Indian-inspired dish won raves for the Allrecipes Allstars team of MommaBean3 (Maureen VanBuskirk), Jenny Aleman (Jennifer Aleman), and ~*CountryGirlGourmet*~ (Debbie Hendrix). They made it as an appetizer, but we tweaked it to make a main dish.

Red Curry Ham Gratin

whipping cream

Greek yogurt

red curry paste

honey

spiral-sliced ham

Yukon gold potatoes, thinly sliced

leek

salt

black pepper, divided

Monterey Jack cheese

green onion, thinly sliced

Preheat the oven to 350 degrees F (175 degrees C). Grease a 3-quart baking dish.


Stir together whipping cream, yogurt, curry paste, and honey; pour half into the dish. Arrange ham, potatoes, and leek in an overlapping layer, then top with remaining whipping cream mixture. Sprinkle with salt, 1/2 teaspoon pepper, and cheese.


Bake, covered with aluminum foil, for 40 minutes. Uncover and continue baking until potatoes are tender and top is golden brown, about 20 minutes more. Let stand for 15 minutes. Garnish with remaining black pepper and green onion.


I substituted half-n-half for whipping cream to cut a little fat.  I layered 1/2 the potatoes, ham and leeks in the pan, followed by 1/2 the cream mixture, and repeated, followed by the cheese.  (This is how I always assemble my scalloped potato casseroles.)  Looked and smelled great out of the oven!  Let rest about 15-20 minutes, and cut into it to find about 1/2 inch of liquid at the bottom of the pan.  Everything was done perfectly, so the time and temperature are spot on.  When I make this again after Easter next year, I'll only cover the dish with foil for the 1st 20 minutes, then bake uncovered for the last 40 minutes to let that excess liquid evaporate.

This was surprisingly GREAT!  I guess I say that, because I have had similar ham and potato dishes before, that all kind of came out tasting more or less the same.   But the Red Curry Paste really makes this one stand out with a flavor that is memorable!  I will definitely prepare it again.  Give the recipe a try and you too might be pleasantly surprised.

If I could give this 10 stars, I would!! This was phenomenal!! Made EXACTLY as written except used Colby cheese.  You want to make sure your potato slices are THIN.  The only thing I might do differently is to cube the ham vs sliced. Sliced worked beautifully! But (and a small “but!”) made “serving” a small challenge. Delicious, complex yet simple flavors! I would absolutely make again and again! Thanks Allrecipes team!!
