Step 1
Heat oil over medium high heat, add onion and jalapeno and saute for 5 minutes or so until tender. Add garlic and saute for 30 seconds (don’t brown the garlic).

Add broth, Rotel, and sazon. Bring to a boil, then cover and reduce heat to low.
Step 4
Simmer for 15 – 20 minutes until the liquid is absorbed and the rice is tender but not mushy. Turn off the heat and let the rice sit for 5 more minutes, covered, off the heat.
Step 5
Fluff rice with a fork, season to taste with salt and pepper and serve!
