Two cups rice? I made this recipe and the moisture was gone before the rice cooked through.  I think another cup of liquid is needed or reduce the rice to one cup.  I ended up quickly microwaving a cup of water to add.. it came out a bit sticky.  Otherwise it’s tasty!  I like using fresh ingredients and this recipe certainly does the trick!  Might swap the garlic powder for fresh next time too. Will make again.

The amount of liquid in this recipe to the amount of rice is totally incorrect! One needs to double the amount of chicken broth, and the cooking time to even get close to cooked rice. The flavor was really good however. I also added about 2 TBS tomato paste to balance out the additional chicken broth I added.

Just made it. We loved it! Substituted ketchup for tomato sauce and added basil, didn't have garlic salt, used avacado oil instead of olive oil, didn't have vegetable broth, used vegetable oxo and 2 cups water. We'll use less ketchup next time. And a little more water.

Definitely only use 1 cup rice. Needs to cook for about 25 min. A little on the tomatoey side but otherwise came out well

Excellent recipe. I made this twice now according to the recipe, only difference is I used veggie stock instead of chicken and added minced garlic instead of the garlic powder. I would like to stress that for white rice the ratio is 1 cup of rice to 1.5 cups of liquid! Brown rice is different and requires more liquid. Be mindful of the type of rice you’re using. Also, I used 1 cup of purreed tomatoes rather than tomato sauce, but either way the tomato sauce serves as 1 cup of your liquid! If you omit the tomato sauce you MUST put an extra cup of broth or water. Otherwise your rice will come out as “pebbles” like some of the other reviews state. Rice is not hard to cook you just need to have the right ratio of rice to water and a little patience.

Was very easy and tasty. Didn’t need to adjust or add anything. Shared it with my children.

I’m confused - the ingredients list tomato sauce, but the directions say tomato purée . . . Is it either one?  I can’t wait to try this recipe!

I love this recipe ! I have not made homemade Spanish rice in years because I lost my recipe. This is the closest I have come to it. I have a question, since it made so much (I should have cut in 1/2) can you freeze leftover of this Spanish rice ? Thanks

I made this a few weeks ago and it was perfect. Followed directions and it turned out exactly as I had hoped. Was worried with all the criticism. I plan on making it again tonight and I can’t wait.

This rice did not have enough liquid for the rice. Definitely added at least 1.5 cups water/chicken stock. Real bummer since reviving undercooked rice is very difficult and such a waste of food.

Very good alternative to stovetop rice cooking.  I was making chile rellenos and had no room on my stovetop to make rice so I tried the instant pot and this recipe.  I added a small amount of extra water since I was using parboiled rice which seems to require a bit more water (a extra two tablespoons).  The family could not tell the difference.

Rice came out very gummy and overly salted (albeit I did add a <em>bit</em> more salt than called for on accident, so this may be my fault). Also, the rice was all stuck to the bottom of the pan and a pain to clean out. I rinsed my rice well and mixed the rice/water/oil/salt mixture to make sure it was evenly coated.

Quick and simple recipe. Came out great This! This was a great video! I wish they were all this simple and straigh to the point AND still enjoyable to watch! Thank you!

My rice cooker died so I decided to try rice cooked in my Instant Pot.  Made the recipe exactly as listed and the rice turned out perfectly.  I only had about a teaspoon size spot stick but it wasn’t a burnt stuck, just sticky.

This quick fix Salsa Verde Chicken and Rice recipe could not be any easier. There's only 4 ingredients! Plus, everything cooks in the same skillet - even the rice - so you only have to wash one dish. Super simple to throw together on a busy weeknight!

Salsa Verde Chicken and Rice

chicken breasts

salt and pepper

long grain white rice (not instant)

Rinse the chicken breasts and pat dry. Cut into bite-sized pieces (about 1-inch cubes). Season generously with salt and pepper. In a large pot or dutch oven (something with a lid), heat the olive oil over medium-high heat.

When the oil is very hot, add the chicken in a single layer and cook until the outside is golden brown, about 1-2 minutes per side.

Add the rice, salsa verde, and chicken broth. Bring to a boil then cover, reduce heat to low, and simmer for 20 minutes until the rice is tender. Serve and enjoy!

This was easy and delicious. My husband and 16 year old daughter liked it. Will definitely make again.

Easy Spanish Style Rice

chopped yellow onion

tsp salt, more or less to taste

tsp black pepper, more or less to taste

tsp smoked paprika (use regular paprika

13.5 oz canned diced tomatoes with chilis

vegetable broth

Drizzle oil in a deep dish pan. Heat up the pan over medium high heat. Add diced onions and cook until softened and slightly translucent. Add garlic followed by the mixture of smoked paprika, ground cumin, chili powder, oregano, salt and pepper. Mix everything together and cook over the heat.

While everything is cooking, rinse your rice until the water runs clear. Then add the rice to the pan and mix together. Make sure the onions, garlic and spices are evenly distributed throughout the rice.

Add the diced tomatoes and broth. Bring the pot up to a boil and then lower it to a simmer. Cover and cook until the rice has absorbed all of the liquid, approximately 30 minutes.

Fluff the rice with a fork or spoon and serve while hot! Optional: add cilantro, or your favorite fresh herb, and a squeeze of lime.

Easy Spanish Style Rice Recipe

Restaurant style Mexican rice at home! Two secret ingredients make it easy and delicious (pssst! It's canned tomatoes with chilies and sazon seasoning - secret's out!).

Restaurant Style Mexican Rice

white rice

chicken stock (or water, or vegetable stock)

Rotel

Heat oil over medium high heat, add onion and jalapeno and saute for 5 minutes or so until tender. Add garlic and saute for 30 seconds (don&#8217;t brown the garlic).

Add the rice and saute until the rice is a little browned and toasted.

Add broth, Rotel, and sazon. Bring to a boil, then cover and reduce heat to low.

Simmer for 15 &#8211; 20 minutes until the liquid is absorbed and the rice is tender but not mushy. Turn off the heat and let the rice sit for 5 more minutes, covered, off the heat.

Fluff rice with a fork, season to taste with salt and pepper and serve!
