Cut potatoes into large chunks, about a two bite size. (For small red potatoes this will be halves, for larger red potatoes like we used it will be quarters or fifths).
Step 2
Drizzle with olive oil and toss to coat evenly. Sprinkle with spices.
Step 3
Spread onto a baking sheet in a single layer.
Step 4
Roast at 425 degrees on center rack of oven for 40 - 50 minutes until browned. (Do not flip or turn during cooking).
