Step 1
Preheat oven to 325 degrees. Butter two 8-inch round cake pans and line bottom with parchment paper.

Cream butter, oil and sugars on medium speed. About 4-5 minutes.

Add eggs one at a time mixing until combined. Mix in vanilla extract.

In separate bowl, combine graham cracker crumbs, flour, salt, baking soda, baking powder, and cinnamon.

With mixer on low speed, add flour mixture in three parts and buttermilk in two parts alternating, beginning and ending with the flour mixture. Scrape bowl to ensure all ingredients are combined.

Evenly pour batter into prepared pans. Bake at 325 degrees for about 55 minutes.

Place chocolate in heat safe bowl.

Pour cream into heatproof bowl and microwave until very hot, about 1-2 minutes.

Pour cream over chocolate and whisk until chocolate is melted and smooth. Allow ganache to cool.

Once cool, whisk ganache one medium speed for about 5 minutes until light and fluffy.

Place chocolate in heat safe bowl.

Pour cream into heatproof bowl and microwave until very hot, about 1-2 minutes.

Pour cream over chocolate and whisk until chocolate is melted and smooth. Allow ganache to cool. Set aside.

Fill medium saucepan with water and bring to a simmer.

Place egg whites, sugar, cream of tartar, and salt in heatproof bowl (If you have a stand mixer, use the metal stand mixing bowl). Place bowl on top of the pan of water and heat egg white mixture, whisking constantly until sugar is dissolved.
Step 16
Transfer bowl to stand mixer and using whisk attachment, whisk on medium speed for about 1 minute. Increase speed to high and whisk for about 5 minutes until stiff peaks form. Add in vanilla extract and mix about another minute.
Step 17
Fill and stack cakes with whipped milk chocolate ganache filling.
Step 18
Cover stacked cake with a layer of milk chocolate ganache. Place in the fridge and allow to set.
Step 19
Frost cake with marshmallow frosting.
Step 20
Toast frosting with kitchen torch.
