Combine salmon, mashed potato, tomato, onion, cheese, egg, lemon juice, butter, breadcrumbs and curry powder together in a large container with a lid.
Step 2
Place into fridge, covered, for 1 hour.
Step 3
Remove from fridge, and roll heaped tablespoonfuls of mixture into balls.
Step 4
Coat each ball with egg white and roll in breadcrumbs.
Step 5
Place the balls in a medium hot fry pan, and gently flatten slightly.
Step 6
Shallow fry until breadcrumbs have become golden brown on each side. Remove, place on kitchen paper to drain.
Step 7
Keep warm in the oven, whilst cooking remaining batches.
