Spice up beef mince with turmeric, thyme and hot pepper sauce before folding in shortcrust pastry for a tasty dinner or lunch

Heat the oil in a pan, add the onion and cook for 5 mins. Add the garlic and beef, turn up the heat and cook until the meat is browned. Add the potato, half the turmeric, the purée and thyme, plus 200ml water. Cover and simmer for 15 mins, then remove the lid and cook for 5 mins more. Add the hot pepper sauce and leave to cool.

Heat oven to 220C/200C fan/gas 7. Roll out the pastry to the thickness of a £1 coin. Cut out 6 x 15cm circles, using a small plate as a guide. Divide the mince between the circles, piling it up on one side. Mix the egg with the remaining turmeric, brush around the edge of each circle, then fold over and use a fork to seal the edges. Arrange on a baking tray lined with baking parchment, brush with a little more egg and bake for 20-25 mins. Serve with a green salad.

Onion Patties - Vegan and Gluten Free

gluten-free all purpose/plain flour

tsp sugar

tbsp cornmeal or polenta (See Note 1)

gluten-free baking powder

tsp coarse cooking salt (See Note 2)

tsp black pepper

Sweet Chilli Sauce (to serve)

Finely chop your onions and set aside.

In a large bowl, whisk together all the dry ingredients to evenly distribute them.Add the milk and stir well. You will have a thick batter.

Add the finely chopped onions and mix until well blended.

Add the oil to a large frying pan, and heat the oil over medium heat. I check that the oil is ready by using a simple method. I stick the end of a wooden spoon into the oil. If the oil is ready, it will bubble around the spoon. (See Note 7)

Drop batter by tablespoons into the hot oil. To ensure that the patties are cooked in the centre it is important to flatten the batter with the back of a spatula or spoon.Cook for 2-3 minutes before turning and cooking the other side. Both sides should be golden brown and crispy. (See Note 8)

Drain for a minute on paper towels and continue cooking the remainder.Serve with Sweet Chilli Sauce.

Emma Galloway's Tempeh & Mushroom Burgers with Smashed Avocado

Heat a small saucepan over medium-high heat. Add oil and onion and cook, stirring often, for 4–5 minutes or until tender and golden. Add garlic, finely chopped mushroom and thyme and cook, stirring often, for a good 5–8 minutes or more, until the mushrooms have released their juices and these have evaporated, so that the mushrooms are almost dry, tender and golden (this is important because you don't want any excess moisture or your patties won't hold together). Add paprika and cook for a further 20–30 seconds.

Transfer to a food processor, add tempeh and breadcrumbs and pulse until finely ground. Season with salt and pepper. Shape into 4 large patties, cover and chill for at least 30 minutes, or up to 2 days if preparing ahead of time. If you don't have a food processor, finely chop the tempeh, add onion mixture and breadcrumbs then, using your hands, scrunch everything together until it holds its shape.

Heat a large saucepan over medium-high heat, add a splash of olive oil and cook the patties for 3–4 minutes on each side, or until golden. Grill buns on the cut side until golden. Spread a little mayonnaise and pesto onto the base of each burger bun, then add a patty, a few micro greens or lettuce, some onion slices. Top with smashed avocado and spread a little relish on the cut side of the top bun and place over.

In this tested recipe you&#039;ll learn how to make your own flavor packed homemade salmon burger or sausage. Perfectly seasoned, the it can either be made into burger patties, stuffed links, tubeless links, or meatballs. The secret ingredient is the rolled oats. They hold it together. Cook it reverse sear to keep it from sticking to the grates. Try serving it on a crusty bun with flavored mayo (we like sesame mayo), onion, lettuce, and tomato.

Study. Before making sausage, please familiarize yourself with best practices as described in our article on The Science Of Sausage Making.

Shred the carrot on the large holes of the box grater. Peel and chop finely the onion. Chop the mint fine.

Toppings. Mix the mayo and sesame oil together and put them in the fridge. Slice the tomato and onion.

Slice the fish into cubes removing all bones. Place it on a plate or pan in the freezer, along with the grinder parts that will contact the meat. Leave it there for about 20 minutes until it is firm but do not let it freeze. This makes grinding easier.

Grind the meat with a 1/4-inch die or you can do this in a food processor. Don&#039;t overgrind. Leave it a bit coarse. If you don&#039;t have a grinder, you can use a food processor but don&#039;t turn it to pulp.

Mix in the rest of the burger ingredients except the olive oil.

Taste. Pinch off a small piece of the sausage and cook it in a frying pan, let it cool and taste to see if the seasoning is to your taste. Add more salt or chile if you wish.

Form it into patties, meatballs, skinless tubes, or encase it with clean wet hands.

Chill. Put the patties in the fridge for about an hour to chill them. This helps keep them from crumbling. You can then  store it in the fridge for a day at the most, or in the freezer for about a month.

Grill. Fire up your grill in two zones and shoot for about 225°F in the indirect zone. Grill the cut faces of the buns until they turn amber.

Smoke. Throw some wood on the direct zone and get some smoke rolling. Put the burgers or links on the indirect side and let them slowly come up to about 120°F. This will firm the surfaces so when you move them to the direct heat side they won&#039;t stick to the grates.

Sear. Move them to the direct infrared zone and sear them on both sides. Take them off at 130°F.

Serve. Slather the sesame mayo on both sides of the bun, top with the burger, lettuce, tomato, and onion.

These veggie fritters with corn, chickpeas, and bell pepper are super easy to make, they are vegan, gluten-free, protein-rich and perfect as a snack, side dish, lunch or dinner.

Process chickpeas, onion, garlic, lime juice, and all spices in a food processor.

Add rice flour and mix again.

Put the mixture into a bowl and add the chopped pepper, corn, and parsley. Stir with a spoon or use your hands.

Form 8 patties and fry them with some oil in a skillet from both sides (about 5 minutes each) until golden brown.

Serve with a cashew dip. Enjoy!
