Step 1

Place vegetables on a baking tray and spray with oil. Roast in a pre-heated oven at 200C for around 15-20 minutes or until cooked.

Step 2

While vegetables are roasting, place eggs in a saucepan of cold water and bring to the boil, then reduce to a simmer for 5-7 minutes or until cooked to your liking.

Step 3

Place roasted vegetables in a bowl, sprinkle with nuts, seeds and chia, and serve with boiled eggs, avocado and hummus on top.
