Step 1

Place chillies and candlenuts into separate small bowls. Cover with hot water and set aside to soak for 15 minutes. Using simmering basket, drain chillies and nuts.

Step 2

Place eschalots, garlic, turmeric, shrimp paste and drained chillies and nuts into mixing bowl and chop 10 sec/speed 8. Scrape down sides of mixing bowl with spatula.

Step 3

Add oil and dried shrimp and cook 5 min/120°C/speed 2.

Step 4

Add sugar, salt and tamarind paste and cook 5 min/100°C/speed 2. Serve with meat or vegetable dishes, as desired.
