Step 1
Cut Green Onion into 2-inch pieces and pat dry.
Step 2
In a pot, add in oil and add in the white parts of the green onion. Turn the heat up to medium-low and let the white parts of the green onion sizzle for 10-15 minutes. Make sure to keep an eye out to prevent the green onion from burning.
Step 3
Add in the green parts of the green onion, and fry for another 5-10 minutes. Remove any burnt pieces.
Step 4
In a bowl, mix soy sauce, dark soy sauce, vegetarian oyster sauce, and sugar.
Step 5
Once all the green onion is removed, turn the heat off and let it cool off for 2-3 minutes.
Step 6
Next, add in the soy sauce mixture. The oil may splatter, so make sure to heat off before pouring in the soy sauce.
Step 7
Mix until sugar is fully dissolved. This can store in the fridge foir 2-3 weeks.
Step 8
Optional, but HIGHLY recommended, fry an egg.
Step 9
Start with your favorite noodles, drizzle 2-3 tbsp of oil all over the noodles, topped with a fried egg. ENJOY!
