Preheat grill to medium or oven to 350°F.

Whisk cumin, paprika, allspice, turmeric, and cardamom. Set aside.

Toss carrots, red peppers, onion, zucchini, and eggplant with evoo, salt, pepper, grated garlic, and spice mix.
