Step 1
In your pressure cooker, place trivet and pour in at least 1 cup of water.
Step 2
Place your whole chicken onto the trivet. Insert the onion half and lemon half into the chicken cavity. With a sharp knife, carefully carve the skin of each breast and fold back.
Step 3
Rub cajun seasoning and garlic lemon pepper seasoning onto the breast meat as well as onto the legs, wings, and thighs. Fold skin back over chicken breast. Sprinkle salt, pepper, and paprika over whole chicken. Feel free to toss a little extra cajun seasoning and garlic lemon pepper seasoning over the whole chicken as well.
Step 4
Place lid on pressure cooker and seal. Set pressure cooker to high. Cook for 18-24 minutes (or 6 minutes per pound).
Step 5
Once cooking has finished, let your pressure cooker naturally release for a minimum of 10 minutes. Letting it release for 15-20 minutes will yield more tender chicken.
