Preheat the smoker to 250 degrees F.

Poke holes in the potatoes with a fork.
Step 3
Brush the potatoes with olive oil.
Step 4
Sprinkle on some sea salt and black pepper to taste.

Place potatoes directly on the grill grate. Close the lid, and smoke for about 1 hour and 15 minutes, until the potatoes can be pierced easily with a fork.
