Smoked Potatoes - this smoked potato recipe is buttery and delicious and is the perfect side dish for any meal! So easy!

Smoked Potatoes

Place potatoes in a medium mixing bowl. Add oil, salt, pepper, oregano, garlic powder, onion powder and marjoram. Stir to coat the potatoes.

Create a foil boat and spray the bottom with non-stick or olive oil.  Pour the potatoes inside.  Place a dollop or two of butter (or ghee or plant butter) on top.

Place on the smoker and close the lid. Let smoke for 1.5 &#8211; 2 hours.

Increase smoker temp to 350 degrees F. and let potatoes continue to cook for 20-30 minutes &#8211; or until they have reached your desired softness.

Remove from smoker and serve immediately.

Garlic and Herb Smoked Potatoes

½ lb bag of Gemstone Potatoes

Parmesan, (fresh grated (optional))

fresh chopped parsley, ((optional))

10-12 garlic cloves, (freshly chopped)

basil

dill

Italian seasoning

¼ teaspoon ground pepper

Preheat

Rinse

Rinse the potatoes and put them into a large plastic gallon bag.

Chop

Next, chop the fresh garlic cloves and put into the Ziplock gallon bag.

Add the olive oil, oregano, basil, dill, salt, Italian seasoning, and ground pepper to the plastic bag and seal.

Marinate

Shake the bag so the potatoes are well coated. Place the plastic bag in the refrigerator for at least 2 hours to marinate. Expert Tip: Because there are no perishable ingredients in this recipe, the potatoes can also marinate a room temperature.

Wrap

After the potatoes have finished marinating, you&#39;re going to make a loose foil packet by folding the aluminum foil in half. Place the  potatoes and 2 Tablespoons of water in the center of the aluminum foil and then pull over one side so you can fold all the edges. Expert Tip: Make sure you don&#39;t seal the packet all the way because you want some of the smoke to penetrate the potatoes. You can either poke holes in a sealed foil packet or leave a small opening in the middle of the foil packet.

Place

Place the foil packet containing the potatoes directly on the smoker rack.

Once done, remove the foil packet, slowly open and pour the potatoes into a bowl. 

Serve immediately and top with fresh grated Parmesan cheese and chopped parsley.

After cooking for an hour, open the foil pouch up to let the smokey flavor into the potatoes. If making cheesy potatoes, top with your favorite shredded cheese. Continue cooking for 1/2 to 1 hour longer.

Remove from the pellet grill and serve immediately.

Cut the potatoes on a cutting board with a chef&#39;s knife into wedges or chunks

Place in a bowl. Add oil and toss.

Add seasoning and toss well with a spoon to coat evenly.

Place potatoes on aluminum foil or in an aluminum foil pan.

Place directly on the rack of the smoker. See notes below for times.

Potatoes are done when they pierce easily with a fork and the internal temperature is 205-210°F / 100°C.

Smoked Hasselback Potatoes

Wash potatoes in tepid water using a vegetable brush. Be gentle, but use enough force to clean any dirt off the skin. Pat each potato dry with paper towels.

Take a strong metal skewer and push it through about 1/3” from the bottom of the potato lengthwise. This will act as a cutting guide since you do not want to slice the potatoes all the way through. Using a sharp knife, cut straight down until you hit the skewer. Refer to the recipe photo for more guidance.

Preheat your grill or smoker for 275 degrees F.

Coat cast-iron pan with olive oil, and place each Hasselback potato into the pan.

Melt butter and season with garlic powder, black pepper, and salt (optional). Brush half of the butter mixture onto the slits of the potato, reserving the second half for later

Place cast iron pan with the potatoes onto the grill grate, close the lid, and let cook for 1 hour. Brush with remaining butter mixture, and cook for an additional 50-60 minutes, or until the potatoes are tender and reach an internal temperature of 210 degrees F.

Once cooked, carefully remove the pan from grill and set onto a heat resistant surface. Let the potatoes sit for 10 minutes. Garnish with chopped parsley or chives, and serve.

Optional step: Crisp up the potatoes in your oven. Broil on the highest setting for 3 minutes.
