Stir 10-12 times to chill.Strain over fresh ice into rocks glass.Squeeze orange rind over cocktail to release oils. Garnish with a black cherry.Stir again in rocks glass to mix orange zest and cherry.Place smoking hat on top of rocks glass and fill hat with a ¼ teaspoon of cherry wood chips.Ignite and allow to smoke for 20-30 seconds. Remove hat and serve. Procedure for Simple Syrup Use a 1:1 ratio of white sugar and water.Bring water to a light boil. Slowly stir in sugar until dissolved. Remove from heat and allow to cool. Procedure for House-Made Cherry Bitters Place wood chips on baking sheet and place in oven at 300° F for 4-6 minutes to release aroma.Place cherries, syrup and wood chips into a gallon ziplock bag. Mash ingredients together and add Everclear.Remove air from ziplock bag. Place into a set water bath at 55° C and cook for 2 hours.Remove zip lock bag and allow to cool to room temperature. Refrigerate for 8-12 hours.Finely strain and store in bitter bottles.
