Step 1
Preheat the oven to 400 degrees and spray a 9x13 baking dish with non-stick cooking spray. Set aside.
Step 2
In a large skillet over medium heat, add ground beef, onions, and jalapenos. Stir to combine and cook until meat is no longer pink and onions and peppers are tender. Drain and return to the skillet.
Step 3
Add garlic and seasonings to meat, stir to combine, and cook for 2-3 minutes.
Step 4
Add corn, black beans, rotel, green chillies, sour cream and 1 cup of shredded cheese. Stir to combine and cook until the cheese is melty and heated through.
Step 5
Spoon into the prepared baking dish and spread in an even layer. Add the remaining cup of shredded cheese over the top of the meat mixture.
Step 6
Top with potato rounds.
Step 7
Place in the preheated oven for 30-35 minutes or until tots are golden brown.
Step 8
Remove and serve with your favorite sides.
