Step 1
In a pan set over medium high heat, add cooking oil, followed by onions and diced spam. Fry until onions are translucent and spam is slightly brown.

Add in your frozen mixed vegetables that have been rinsed in water. Fry until veggies have softened, about 1-2 minutes.

Toss in cooked rice and break it down into granules. Mix in with other components.

Season rice with soy sauce, ketchup and sesame oil. Give it a thorough mix until every rice granule is coloured in brown.

Transfer the rice into two separate bowls and pack it down. This is to create the domed rice.

Place a larger shallow bowl over top of the rice. Repeat this process for the other serving bowl. Let it rest as you cook the other components.

Eventually, we will flip the small bowl of fried rice into the large shallow one to create a dome shape.

In a small pot, add your sauce ingredients and whisk them together.

Then bring it to a boil while stirring.

Once sauce as thickened, reduce heat to low to keep it warm.

Whisk 2 eggs with 1/8 tsp salt (per serving).

In a small non-stick pan (8 inches wide) set over medium heat add oil.

Pour your eggs into the pan and let it bubble to create a solid base. Let it cook until cooked but creamy and slightly run.

If you want to create the tornado egg this is where you quickly insert a pair of narrow chopsticks at an angle and bring them to the center.

As you hold the chopsticks, keep turn the pan as your egg slides to create a tornado shape

Once your egg pancake or egg tornado is cooked, with the help of the chopsticks slide it over your fried rice dome. Repeat this process again for the second serving of fried rice.
Step 17
Finally, pour some of the demi-glace sauce around the dome and serve while hot. Enjoy!
