Step 1
Preheat oven to 200°C. Line a baking tray with non-stick baking paper.
Step 2
Use a spice grinder or a mortar and pestle to grind the lemon pepper seasoning until finely crushed. Transfer to a small bowl. Add the parmesan, paprika and salt, and stir to combine.
Step 3
Brush the pastry evenly with oil. Sprinkle half the lemon-pepper mixture evenly over pastry. Fold 2 opposite sides of the pastry into the centre of the sheet. Sprinkle with half the remaining lemon-pepper mixture.
Step 4
Continue folding in the sides and sprinkling with lemon-pepper mixture until a double log forms. Cut crossways into 1cm-thick slices. Place pastry slices, cut-side up, on prepared tray, allowing room for spreading.
Step 5
Bake in preheated oven for 10 minutes. Remove from oven. Turn palmiers over and bake for a further 4-5 minutes or until golden brown and puffed. Remove from oven. Serve warm or at room temperature.
