Step 1
Preheat oven to 180°C. Grease 4 holes of an 8-hole mini loaf tray or 4 individual mini loaf tins and set aside.
Step 2
Place water into mixing bowl. Insert simmering basket and weigh pumpkin into it. Add orange zest and cook 13 min/Varoma/speed 2, or until pumpkin is soft. Remove simmering basket with aid of spatula and set pumpkin and zest aside to cool for 5 minutes. Discard water in mixing bowl.
Step 3
Place steamed pumpkin and orange zest, butter and brown sugar into mixing bowl and mix 15 sec/speed 7. Scrape down sides of mixing bowl with spatula.
Step 4
Add all remaining pumpkin loaf ingredients and mix 5 sec//speed 4.
Step 5
Scrape down sides of mixing bowl with spatula and repeat mixing 5 sec//speed 4.
Step 6
Transfer into prepared tray or tins and bake for 20-25 minutes (180°C) or until a wooden skewer inserted into the centre of each loaf comes out clean. Cool loaves in tray for 15 minutes, then remove and transfer onto a wire rack to cool completely (approx. 30 minutes).
Step 7
Place all cream cheese frosting ingredients, except cinnamon, into mixing bowl and and mix 10 sec/speed 5.
Step 8
Scrape down sides of mixing bowl with spatula and mix 10 sec/speed 5.
Step 9
To serve, decorate each loaf with cream cheese frosting, sprinkle with cinnamon and cut each loaf in half.
