Step 1

Combine mangoes, onion, chilli, sultanas, vinegar, salt and ginger in large bowl.

Step 2

Cover, stand at room temperature for several hours, or overnight.

Step 3

Place the mixture in large pan, stir in sugar, stir over low heat until sugar dissolves.

Step 4

Add remaining ingredients, bring to boil, simmer, uncovered, stirring occasionally about 1¼ hours or until mixture is thickened.

Step 5

Pour into hot, sterilized jars; seal jars while hot.
