This is not your ordinary recipe for pickles. This is an Asian-inspired, sweet and sour, and spicy recipe for pickled easy cucumbers! With just a few recipes, you can create simple yet original pickles that you can serve with everything: salads, burgers, tacos, nachos, soups, side dishes...

Spicy Sweet and Sour Pickled Cucumbers

qukes, Lebanese or English cucumbers (thinly sliced, with the skin on)

large shallot or red onion (thinly sliced)

white rice vinegar (seasoned

white granulated sugar

tsp salt

tsp chilli flakes

ginger

Using a mandoline or a very sharp knife (be very careful when using the sharp knife!) slice your cucumbers and a shallot or red onion. Push it to the bottom of a clean pickling jar and set aside.

In a bowl, mix together rice or apple cider vinegar, white sugar, salt, chilli flakes, and fresh ginger. Stir until all sugar and salt is fully dissolved.

Pour the brine over the cucumbers and shallot in the jar. Make sure they are fully covered with the brine.

Let it sit for at least 30 minutes before eating. Serve as a side dish or on your burgers, tacos, nachos, pizzas etc.

Once open the jar can be stored in a fridge for up to 1 week.

Bomb Sous Vide Oreo Cheesecake

cream cheese packages

buttermilk

sugar

eggs

oreo cookies, crushed

vanilla

Tbsp salted butter

Set sous vide machine at 80C/176F.

In food processor or mixer, combine cream cheese, sugar, salt, eggs and vanilla. Mix until ingredients are combined and cream cheese is softened. Scrape down sides, add in buttermilk and mix again until ingredients evenly incorporated. Fold in crushed oreo cookies and stir well.

Pour an equal amount of cheesecake filling in each canning jar, and screw on the lid of each jar (see note). Gently submerge the entire jars in the bath using rubber tongs, and set a timer for an hour and a half.

Remove from bath and let rest on counter top for 30 minutes to cool. Once cooled, transfer the cheesecake to the refrigerator for a minimum of 6 hours to set the filling. When ready to serve, garnish with the oreo crust (recipe below) and your favorite toppings. Now enjoy these heavenly treats straight from the jar!

Preparing the Cheesecake

Preheat oven to 163/325F.

In a food processor, pulse oreos until finely crushed. Slowly pour in melted butter to mixture while pulsing. Alternatively use a bag to crush the oreos then stir in the butter by hand if you don&#x27;t have a food processor!

Spread mixture in an even layer on a lined cookie sheet. Bake for 15 minutes, stirring halfway through.

Remove crust mixture from oven, and set aside to cool.
