Step 1
Prepare Noodles: Cook noodles according to package instructions, then drain and set aside. For QQ noodles from kai dong, cook for 6 minutes and set aside.

Season Shrimp: Toss shrimp with a pinch of salt and pepper.

Make Sauce: In a small bowl, mix soy sauce, oyster sauce, fish sauce, and sugar.

Heat 1-2 tbsp chili oil in a large pan or wok over medium heat. Add red onion and garlic. Stir-fry for 1-2 minutes or until fragrant.

Next, dd in the shrimp, and Sauté until the shrimp are pink and cooked through about 2-3 minutes.

Next, add in the noodles, bok choy, and bean sprouts, and drizzle on the sauce. Saute on high heat for 2-3 minutes or until noodles are coated in the sauce and bok choy is softened.
Step 7
Finally, add in the Thai basil and saute on high heat for 1-2 minutes.
