4 boneless, skinless chicken breasts, pounded thin or cut in half lengthwish2 cups spinach leaves, chopped6 ounces quartered and marinated artichoke hearts, roughly chopped1/2 cup grated Parmesan cheese1/3 cup mayonnaise1/3 cup sour cream2 cloves garlic, minced4 slices mozzarella cheesesalt and pepper to taste

Step 1

Preheat oven to 350 degrees.

Step 2

Season chicken breasts with salt and pepper and place in a 9x13 baking dish.

Step 3

In a medium bowl, combine the spinach, artichokes, Parmesan cheese, mayonnaise, sour cream, and garlic until well blended. Spread on top of the chicken breasts covering completely. Place a slice of mozzarella cheese on top.

Step 4

Bake for 35-40 minutes or until chicken is no longer pink.
