Step 1
Preheat the oven to 350° F. Spray a 12 cup muffin tin with non-stick cooking spray and sit aside.
Step 2
In a blender combine eggs, cottage cheese, salt and pepper and blend until well combined.
Step 3
Pour mixture into a large bowl and mix in gruyere cheese.
Step 4
Fill muffin tins (or silicone molds) ⅔ full with mixture and place cooked bacon on top of egg mixture.
Step 5
Cook for 25-30 minutes or until eggs are cooked. Watch egg bites starting at the 20 minute mark.
Step 6
Remove muffin pan from oven and let cool for 5 minutes. Remove egg bites from muffin tin and serve warm.
