Step 1
Into a large saucepan over medium heat, add the apples, water, sugar, and cinnamon (if using).
Step 2
Cover and cook for 15 minutes, until the apples are fork-tender.
Step 3
Remove from heat and allow to cool 15 minutes, until the apple mixture has thickened.
Step 4
Using a potato masher, mash the apples to your desired consistency.
Step 5
Applesauce can be served warm right away or chilled for later.
