Step 1
Using a blender or immersion blender, combine all crepe batter ingredients together EXCEPT for the butter. Set aside

Whisk the cream ingredients in a stand mixer until soft peaks form. Set aside

Preheat a saute pan over medium-low heat for one minute
Step 4
Add a cube of butter to the pan and swirl. Once melted, add a ladle of crepe batter to the pan and swirl to create your crepe. The crepe should be thin, so don't worry if this is too thick.
Step 5
Flip crepe over after about 30 - 45seconds with a rubber spatula then continue to cook for another 20 seconds.
Step 6
Remove crepe to a plate and let cool while you repeat with remaining crepes.
Step 7
Assemble roll by three crepes overlapping halfway over each other. Spread half the whipped cream, then sprinkle with broken wafer cookie and fresh strawberries.
Step 8
Roll up by folding the sides about an inch to create a long rectangle. Then roll from one end to the other. Slice into 1 1/2 inch rings.
