Strawberry Banana Muffins

all-purpose flour

baking powder

unsalted butter (softened)

¼ cup packed light brown sugar

vanilla bean paste ((or vanilla extract))

vanilla Greek yogurt

bananas (mashed)

Preheat oven to 425°F. Line two 12 count muffin tins with paper liners or grease with non-stick cooking spray. Set aside.

In a medium bowl, combine the flour, baking powder, baking soda, cinnamon and salt. Set aside.

In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. Slowly beat the egg, vanilla, and yogurt into the butter mixture.

Add the flour mixture into the butter mixture and beat until just combined. Gently fold in the mashed banana, followed by the strawberries. **Batter will be THICK and that is normal since there is no liquid in recipe!**

Spoon batter into prepared tin, filling each until about ¾ of the way full.

Bake for 5 minutes at 425°F, then keeping oven door closed, lower temp to 350°F and bake for 15 minutes, or until muffins are lightly browned. This oven trick helps to ensure those large, bakery-style muffins.

Remove from oven and let cool for 10 minutes in pan, then remove and cool completely on a wire rack.

Very good and easy to make.  I used a cast iron skillet and it turned out nice and crispy on the edges

The topping was good, but the cake itself was way too dry.  It needs much more moisture, perhaps some milk and/or more sour cream.  After one piece that neither of us finished, we scraped off the topping to use for ice cream, then put the rest of the cake down the garbage disposal.

We love strawberries so will try again using a cake mix for the cake part.

This was out of this world delicious and easy. I served it with whipped cream. Made it 2 hours before company. It was gone in a minute.:)))

Preheat oven to 200°C/390°F (180°C fan).

Grease and line a 23 cm / 9&quot; cake pan with baking paper/parchment paper. (Any type of cake pan is fine)

For inside of cake: Dice some strawberries into ~1.5cm / 1&quot; pieces to make 1 cup (about 1/3 of the strawberries)

Topping: Cut the remaining strawberries in half.

Strawberries:

Place Wet ingredients in a bowl and whisk well for 1 minute.

Add Dry ingredients then whisk well until lump free.

Pour half into cake pan, smooth surface. Scatter over diced strawberries.

Top with remaining batter. Smooth surface, then top with halved strawberries, cut face down.

Bake 50 minutes or until skewer inserted into centre comes out clean. (Note 1) If you need to cook longer, cover with foil if it starts getting too golden.

Stand 15 minutes in the cake pan before turning out onto cooling rack.

Cool 15 minutes+ before serving warm or at room temp. Dust with icing sugar, and serve with cream or if serving warm, ice cream!

So easy and perfectly sweet! These vegan strawberry jam bars have a perfect crispy crumble topping and super healthy strawberry jam filling. The perfect afternoon snack or healthy dessert!

Vegan Strawberry Jam Bars

cup whole wheat flour

cup all-purpose flour

dates

cup olive oil

almond milk

chia seeds

Preheat oven to 325 degrees F. Line an 8×8 or 9×9 square pan with parchment paper and grease lightly. Set aside.

In a saucepan over medium heat, cook the strawberries until they start to break down and can be mashed with the back of a spoon, about 5-7 minutes. Remove from heat. Add the chia seeds and Zevia. 

In a food processor, combine the whole wheat flour, all-purpose flour, oats, dates, cinnamon, salt, olive oil, and almond milk. Pulse together until the batter starts to come together. 

Take half of the mixture and press firmly it into the bottom of the prepared pan. Spread the strawberry filling over the crust. 

Sprinkle the rest of the crumble mixture over the top of the filling, until all has been used.

Bake for 50 minutes, or until filling is bubbly and top is golden brown.

Remove from oven and after the bars have cooled for 10 minutes, chill for at least 30 minutes before cutting.

Unexpectedly delightful little pops of sweet vinegar-soaked strawberries on grilled sourdough with goat cheese, thyme, and honey!

Pickled Strawberries

Place the strawberries in a jar. Add the vinegar, sugar, peppercorns, and salt. Fill to the top with water. Secure the lid and shake gently to combine.

Wait Time

Place in the refrigerator for 2 hours, or up to 2 days. (I prefer these within the first 12-24 hours so they don&#8217;t get too mushy.)

For Serving

Fry or grill the bread. I fry a few slices at a time in olive oil on my griddle until nice and golden and crispy. Smear the goat cheese on the toast and top with a few strawberries. Smash them gently with a fork. Sprinkle with bits of thyme, a drizzle of honey, and a hit of salt. Mwah!

These would be amazing on a salad..spinach, some feta crumbles, maybe some leftover rotisserie chicken  yum!!!

Made this for my kids for breakfast and I asked him how many stars I should rate it and he said 1000. 

I bought honey flavored goat cheese since it has a honey drizzle which was perfect.

Not a big fan of berries but I realize their many benefits. Started buying little “flats” of blueberries washing them &amp; freezing them to use in a “mash” if you will with lemon, ginger cinnamon &amp; sometimes Turmeric blended together. I pickled cucumbers nearly a year and a half ago, using this method with the addition of boiling the jars in a large pot at a rolling boil for about 15 minutes. It seals the jar. I opened one a few days ago and they were fantastic.

Strawberry Shortcake is a great summer dessert using bright fresh berries. Light &amp; sweet angel food cake is toasted and layered with whipped cream, which is a delicious twist on the typical strawberry shortcake recipe.

Strawberry Shortcake

Wash the fruit and pat dry. Slice strawberries and place into a bowl. Add in the sugar and gently stir together. Cover and place in the refrigerator for two hours.

Preheat oven to 375°F.

Cut the angel food cake into cubed pieces and place them onto a baking sheet covered with parchment paper.

Bake for 8-10 minutes until they are slightly toasted.

Remove from oven and cool.

In clear glasses, layer the angel food cake, strawberries, and whipped cream. Repeat layer once again and top with whipped cream.

Serve immediately.

A refreshingly light cake for the spring strawberry season. Fresh whipped cream and strawberry wafers takes the swiss roll to new heights.

Strawberry Dream Rolls

all purpose flour

unsalted butter, cubed

strawberry wafer cookies, crushed

Powdered sugar,

Using a blender or immersion blender, combine all crepe batter ingredients together EXCEPT for the butter. Set aside

Whisk the cream ingredients in a stand mixer until soft peaks form. Set aside

Preheat a saute pan over medium-low heat for one minute

Add a cube of butter to the pan and swirl. Once melted, add a ladle of crepe batter to the pan and swirl to create your crepe. The crepe should be thin, so don't worry if this is too thick.

Flip crepe over after about 30 - 45seconds with a rubber spatula then continue to cook for another 20 seconds.

Remove crepe to a plate and let cool while you repeat with remaining crepes.

Assemble roll by three crepes overlapping halfway over each other. Spread half the whipped cream, then sprinkle with broken wafer cookie and fresh strawberries.

Roll up by folding the sides about an inch to create a long rectangle. Then roll from one end to the other. Slice into 1 1/2 inch rings.

Line a 12 tin muffin liner with 12 liners or 2 liners with 6 muffin tins in each (Your preference) and set aside. Melt the butter and prepare to measure the rest of your ingredients as it cools.

In a small bowl, make the streusel. Combine flour, white sugar, and cold cut up butter. Using your hands, mix it together until combined into a crumbly, streusel mixture. Set aside while you make the muffin batter.

In another small bowl, add in flour, salt, cornstarch, baking soda, and baking powder. Using a spatula, mix around until mixed together.

In a large bowl, whisk melted and cooled butter, white sugar, egg, egg yolk, buttermilk, oil, and vanilla. Whisk until combined.

Add in dry ingredients Using a spatula, gently fold until just combined. It&#39;s important not to over mix with muffins.

In the bowl with the sliced strawberries, add 1-2 tsps of flour and gently toss around until evenly coated. The light coating of flour will absorb any extra liquid it may have before adding it into the mixing bowl.

Add the sliced strawberries and mix in a few times.

Evenly divide the batter between 12 muffin liners. You can bake them all in 1 tin, or 6 in 2 tins for a taller rise. Sprinkle streusel on top.

Bake the muffins at 425°F for 5 minutes, then turn down to 375°F and bake for an additional 12-15 minutes. The muffins are ready when they bounce back at touch or a toothpick inserted comes out clean.

These muffins are best eaten fresh. They stay fresh covered at room temperature for a few days, or in the refrigerator in an airtight container for up to 1 week!
