Wash strawberries with cold water. Separate leaves. Cut in half.
Step 2
In a blender or mixing bowl, pour cream, strawberries, sweetener and cream cheese. Blend well, scraping the sides. Continue to blend.
Step 3
In a cup with gelatin, add boiling water and stir until gelatin is completely dissolved.
Step 4
Pour gelatin mixture slowly into strawberry mixture as you whip it together.
Step 5
Transfer mixture to your serving glasses, leaving about ¼ inches space from the brim.
Step 6
Refrigerate for 3 to 4 hours. If you’re in a hurry, place in the freezer for 45 minutes to 1 hour to chill.
Step 7
Once chilled, sprinkle cocoa powder on top, add chocolate bits, garnish with fresh mint and fresh strawberries.
Step 8
When serving for Valentine’s Day, add some heart-shaped homemade low carb chocolates.
