Step 1
Muddle 2 strawberries at the bottom of each cocktail glass. Use a muddler to thoroughly mash the strawberry until you see a lot of strawberry juice at the bottom of the glass, and the pieces of fruit don't stick together in a clump.
Step 2
Top the strawberries with about 1/2 cup of ice per glass––cubed or crushed ice.
Step 3
Add the ingredients to a cocktail shaker with cubed ice: gin, freshly squeezed lemon juice (seeds removed), and rose simple syrup. Shake and pour into the glass.
Step 4
Garnish with some crushed dry rose petals (optional), more strawberry, or slice of lemon.
Step 5
Bring the sugar, water, and rose water to a simmer in a small pot.
Step 6
Reduce the heat to low, and continue to cook for 15 minutes, until the liquid reduces and the syrup reaches a thicker consistency (similar to agave).
Step 7
Remove from the heat, and store in a glass jar in the refrigerator.
