Step 1

First, preheat your oven to 400°F (200°C). Lightly grease a baking dish.

Step 2

Lay each chicken breast flat on a cutting board. Use a sharp knife to make a horizontal slit along the side of each chicken breast, being careful not to cut all the way through. This will create a pocket for the stuffing.

Step 3

Season the inside and outside of each chicken breast with salt and pepper.

Step 4

Layer a slice of cheese, a handful of spinach leaves, and a spoonful of chopped sun-dried tomatoes inside each chicken breast pocket. You can adjust the amount of filling to your preference.

Step 5

In a small bowl, mix together the minced garlic, olive oil, and dried Italian herbs.

Step 6

Brush the garlic and herb mixture over the outside of each chicken breast, coating them evenly.

Step 7

Use toothpicks or kitchen twine to secure the openings of the chicken breasts and hold the filling in place.

Step 8

Place the stuffed chicken breasts in the greased baking dish. If desired, drizzle any remaining garlic and herb mixture over the top.

Step 9

Bake the chicken in the preheated oven for about 25 to 30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

Step 10

Once cooked, remove the stuffed chicken breasts from the oven. Let them rest for a few minutes.

Step 11

Carefully remove the toothpicks or kitchen twine before serving.

Step 12

Finally, serve the stuffed chicken breasts with your choice of sides, such as roasted vegetables, salad, or mashed potatoes.
