Step 1
Preheat the oven to 180°C and lightly oil a baking tray.
Step 2
Place the oil in a pan over medium low heat, add the onion and cook for 8-10 minutes until soft but not browned. Cool, then place in a bowl with meat, egg, parmesan, crumbs, parsley, paste, 1/2 teaspoon salt, and pepper. Mix well.
Step 3
Halve zucchini lengthways, and use ateaspoon to scoop out centres. Arrange cut-side up on the baking tray. Finely chop zucchini pulp, squeeze dry and combine with the meat mixture. Form mixture into sausage shapes and use to fill zucchini.
Step 4
Bake for 40 minutes until meat is cooked and lightly browned.
Step 5
To make the salsa, combine ingredients in a saucepan with sea salt to taste and bring to the boil, stirring. Cook for 10 minutes, stirring occasionally, until thick.
Step 6
Remove zucchini from oven and blot with absorbent paper to dry any meat juices that have collected. Serve with the salsa and sprinkle with extra parmesan.
