Step 1
Cut the pork side ribs into cubes by following the bones. Cook the pork in boiling water for 3-4 minutes and set aside.
Step 2
Mix dark soy sauce, soy sauce, rice vinegar, Chinese cooking wine, and sugar until sugar is dissolved.
Step 3
Turn the heat up to medium-high and drizzle oil into a pan. Once the oil is hot, add in pork and sauté for 3-4 minutes.
Step 4
Add in garlic and saute together for another 1-2 minutes.
Step 5
Drizzle in the sauce and mix for 1-2 minutes until pork is covered in sauce and pour in 2 cups of water. Bring it to a simmer and turn the heat to medium-low. Simmer for 30 minutes.
Step 6
After 30 minutes, turn the heat up to high and cook uncovered for 3-4 minutes.
