Step 1
Toss mix: In a large bowl, gently toss together the Cheerios, both types of Chex cereal, peanuts and pretzels. Set aside.
Step 2
Melt chocolate: Add the chocolate and extract to the bowl of a double boiler (SEE NOTES). Use a rubber spatula to stir constantly until the chocolate is almost fully melted – avoid overheating the chocolate as it will harden! Remove the bowl from the double boiler and continue to stir until the chocolate is completely melted and smooth in consistency.
Step 3
Pour chocolate over Chex mix: Pour the melted white chocolate over the Chex mixture. Use a rubber spatula to gently toss the mixture well until it is evenly coated and covered in chocolate.
Step 4
Add M&M’s: Add both M&M’s to the mixture. Toss until evenly combined.
Step 5
Dry: Line two large baking sheets with parchment or wax paper. Spread the chocolate Chex mixture out evenly over the prepared baking sheets. Quickly sprinkle flaky salt and sprinkles all over the Chex Mix while the chocolate is still wet. Transfer to the refrigerator and chill until the chocolate is cool and set, about 20-30 minutes.
Step 6
Serve: Break the holiday Chex mix apart into serving-sized pieces and enjoy!
