Place the sweet chilli sauce, grated ginger and soy sauce in a large non-metallic bowl. Add the beer, salt and cracked black pepper and stir until well combined. Add the ribs, turning until evenly coated in the marinade. Cover and refrigerate for 3 hours or overnight.
Step 2
Heat a barbecue or large grill to medium-high heat. Drain the ribs from the marinade and reserve the liquid. Cook ribs for 8-10 minutes each side or until cooked through, basting with the reserved liquid occasionally. Transfer to a serving platter and serve with a simple salad, BBQ sauce and plenty of napkins.
