Pre-heat oven to 400 degrees

Line a baking sheet with a silicone mat or parchment paper

Step 3

After cleaning and cutting the cauliflower into bite-sized florets, place a single layer on the baking sheet

Sprinkle with garlic powder

Step 5

Cook in 400 degrees for 30 minutes

Step 6

Remove from oven and allow to cool to the touch

Step 7

Combine all ingredients in a cup-sized blender

Step 8

Blend until smooth

Step 9

Set aside

Step 10

Place cooled cauliflower in a medium-sized bowl

Add chopped dates

Step 12

Add chopped pistachios or nuts of choice

Add 3/4 of dressing

Step 14

Stir to coat cauliflower

Pour into a casserole dish

Bake again for 20 minutes

Step 17

Remove from oven, sprinkle with chopped dill

Step 18

Eat as a side dish, add to a bowl of quinoa, or add to a salad.

Serve with additional dressing on the side, or use the additional dressing for another dish.
