Step 1

Squeeze the juice of 1 large or 2 medium limes into a large bowl until you have 3 tablespoons. Thinly slice 1/2 small red onion (about 1/2 cup) and add to the bowl. Add 1/2 teaspoon granulated sugar, 1/2 teaspoon kosher salt, and several grinds black pepper. Toss to coat the onions. Set aside to pickle for 10 minutes, tossing once or twice.

Step 2

Prepare the following, adding them to the pickled onions as you go: Mince 1 garlic clove. Finely chop 1 small bunch fresh cilantro leaves and tender stems until you have 1/4 cup. Add 2 tablespoons olive oil and toss well to combine.

Step 3

Dice 1 large English cucumber and 2 medium avocados and add both to the bowl. Toss gently to coat. Taste and season with more kosher salt and black pepper as needed.
