Step 1

Preheat the oven to 180C/350F/Gas 4.

Step 2

Beat one of the eggs in a bowl. Stir in the turkey mince, 30g/1oz breadcrumbs and Thai green curry paste until well combined. Divide the mixture into four portions and roll each into a ball.

Step 3

Beat the remaining egg in a bowl, sprinkle the flour and remaining breadcrumbs onto separate plates. Roll the meatballs in the flour, then dip in the beaten egg and roll in the breadcrumbs.

Step 4

Transfer to a baking tray and bake in the oven for 15-20 minutes, or until golden-brown.
