Step 1
In a mixing bowl, add the ground chicken, Dad's All Purpose rub, Thai seasoning paste, minced garlic, freshlysqueezed lime juice and chopped green onions. Mix the ingredients together by hand, making sure to evenly blend the flavors together.

Divide the meat mixture into 4 equal parts and shape 1/4 lb. flat chicken patties.

Place them in the freezer for 1 hour to firm up.

In a mixing bowl, add creamy peanut butter, fish sauce, soy sauce, sriracha, freshly squeezed lime juice, white vinegar, and sugar. Mix the ingredients together until the sauce is perfectly blended.
Step 5
Remove about 2 tablespoons of the sauce into another small dish and place to the side.
Step 6
Preheat the grill to 375 degrees and set for direct heat.
Step 7
Place the firmed up chicken patties on the grates and grill for 20 minutes or until the internal temperature reaches 160degrees.
Step 8
Remove the grilled chicken patties and let them rest for 10 minutes.
Step 9
