In a small bowl, whisk together the chia seeds and pea protein powder.

Add in the dairy free milk of choice, and optional vanilla extract and maple syrup.

Whisk with a fork until the clumps of protein powder are almost dissolved. Cover and place in the fridge to set for 3 hours or overnight.

When ready to serve, remove from the fridge, top with your favorite toppings, and enjoy!
