Step 1

Mix flour, baking powder, caster sugar, salt, and instant yeast in a big bowl and make a hole in the middle.

Step 2

Pour the water and mix until well incorporated. Cover the bowl and let it sit for 2 hours, or until it doubles in size.

Step 3

Line a baking sheet with parchment paper and spread the dough in an irregular oval shape (around ¾ inch thick).

Step 4

Cover with a kitchen towel and let it proof for 1 more hour.

Step 5

Preheat the oven to 350ºF (180°C).

Step 6

Using your fingers, make a shape of an inner oval around 1 ½ inches from the border, and then make diagonal marks using a long knife.

Step 7

Top with olive oil and black and white sesame seeds.

Step 8

Bake for 15-20 minutes, or until golden brown.
