Step 1
Cook the pasta according to the box directions in a large pot of salted water.
Step 2
While the pasta is cooking, warm the olive oil on low-medium heat. Mix in the garlic and stir until fragrant, about 2 minutes.
Step 3
Turn the heat to medium, add the halved tomatoes, and sprinkle with salt and red pepper flakes. Cook for 4-5 minutes or until the skins have softened and the tomatoes have become juicy.
Step 4
Add the chopped basil, reserving one Tablespoon for garnish. Turn down the heat to medium-low and simmer, stirring frequently, for 2-3 minutes until the basil has wilted. Then add the lightly drained diced tomatoes.
Step 5
Cook for 5 minutes or until it is heated through.
Step 6
Remove from the heat and sprinkle in the parmesan cheese, reserving 2 Tablespoons for garnish. Stir gently and let the cheese melt into the sauce. It may not melt completely.
Step 7
Stir in the drained cooked pasta and mix gently to incorporate. Sprinkle the reserved basil and cheese on the dish and serve immediately.
