Place onion, carrot, celery, turmeric and ginger (optional) into mixing bowl and chop 2 sec/speed 5.

Add bay leaf, peppercorns, chicken wings and 900 g of the water and cook 60 min/90°C//speed .
Step 3
Add remaining 300 g of the water and cook 30 min/90°C//speed .
Step 4
Add salt and stir with spatula. Using a fine-mesh sieve, carefully strain the broth into a large jug and set aside to cool. Once cool, use as needed or transfer into a sealable jar or container and store in the fridge.
