Step 1

Grate the cucumber then squeeze out any extra moisture.  (This will avoid your sauce from being runny)

Step 2

Add all ingredients, drained cucumber, carrots, garlic, lemon juice to greek yogurt.

Step 3

Stir to mix well.  Add salt and pepper to taste.

Step 4

Ideally make 3 hours before serving (up to overnight). This allows flavors to meld.  Store in an airtight container in fridge until ready to serve.
