Season pork with half the salt and pepper. Heat oil in a large skillet over medium-high. Add chops and sear until well browned on both sides, about 4 minutes per side. Transfer to a plate. Add onion to same pan and cook until beginning to brown, about 4 minutes. Add garlic and cook 1 minute. Stir in tomatoes, sugar, butter, cream and remaining salt. Return pork and any juices to pan. Reduce heat to medium-low and cook, covered, until pork reaches an internal temperature of 160°F, about 20 minutes. Sprinkle with parsley.
