Step 1
Heat the olive oil in a large saucepan over medium heat.
Step 2
Add the onion and sauté until translucent, about 5 minutes.
Step 3
Add the garlic and sauté for a few more minutes.
Step 4
Add everything else except the salt and sour cream.
Step 5
Cook over medium heat and turn to low as soon as it starts to simmer.
Step 6
Cover and cook for 30 to 40 minutes, until piping hot. Taste and season with salt.
Step 7
Serve topped with vegan sour cream.
