Make the seitan chicken and tofu bacon

In a large bowl, toss the romaine lettuce and arugula until combined.

Layer the tomatoes, sliced seitan chicken, crumbled tofu bacon, cubed avocado, slivered onion, and crumbled cheese on top of the lettuce.
