Step 1

add half of the extra virgin olive to a wok that was heated on low for 30 seconds

Step 2

add the vegan sausage slices

Step 3

saute for about 3 minutes on each side, until it has browned

Step 4

add the ginger and garlic

Step 5

add the cauliflower rice and the remaining olive oil

Step 6

add the tajin. If using mushroom stock, add it now

Step 7

mix well and let it cook on low for about 10 minutes (see note #3)

Step 8

cook until the cauliflower is easily crushed with the back of a spoon
