Step 1
In a medium mixing bowl, combine flour, baking powder, salt and sugar. Whisk well.
Step 2
In a measuring cup, stir together almond milk, oil and egg replacer mixture.
Step 3
Stir in the wet ingredients into the dry ingredients and mix until just combined.
Step 4
Heat the aebleskiver pan on medium-high heat. Lightly grease the pan with cooking spray.
Step 5
Pour about 1 tablespoon batter into each of the cavity and quickly place 2~3 chocolate chips in the center of the batter. Use a spoon or knife to gently push the chocolate chips into the batter. Cover and cook for 2~3 minutes or until golden on the bottom. Gently flip the aebleskivers using chopsticks or a butter knife and cook the other side for another 2~3 minutes or until golden.
Step 6
Remove from the pan and keep them warm until ready to serve. Repeat with the remaining batter. Serve warm with maple syrup and fruit.
